Perfect for parties, picnics, or easy entertaining, these crispy whiting nacho cups from WIRFAB Leader, Cara Cummings, are fun, fresh, and packed with flavour. With crunchy wonton shells, spiced whiting and all your favourite nacho toppings, they disappear fast — so make a double batch.
Ingredients
(makes 12)
1 x packet wonton wrappers
Olive oil
2x fillets whiting
Vegetable oil
Rub Mix
1 tsp chili powder
1 tsp sweet paprika
1 tsp cumin
1 tsp salt
Salsa of choice
Grated cheese
Guacamole or avocado dip
Sour cream
Tortilla strips/Corn chips
Lemon
Method
1. To make the cups, lightly brush the wonton wrappers with olive oil on both sides. Using a 12-hole muffin tray, gently press each wonton wrapper into the bottom of each well, forming the cup. Bake them until golden brown and crisp. Approx. 5-8 min 180 degrees.
2. Add all rub ingredients together and mix well.
3. Cut the whiting into strips and thoroughly coat in the rub mix.
4. Heat the vegetable oil in a large frying pan. Add the whiting and cook over a medium heat for approx. 2 mins on each side, until golden.
5. To stuff your nacho cups, sprinkle cheese in the base then layer with the salsa, guacamole, and sour cream. Place the whiting on top, squeeze a little lemon and finish off with a tortilla strip as garnish.
