Hearty Homestyle Fish Pies

Warm, hearty, and perfect for feeding the family, these Homestyle Fish Pies from WIRFAB Leader, Cara Cummings, turn a simple catch into a comforting classic. Filled with tender fish, veggies, and a savoury sauce wrapped in golden puff pastry, they’re ideal for weeknight dinners, lunchboxes, or freezing ahead for an easy meal.

Ingredients

(makes 6 individual or one family pie)

300g fish (chopped into 4-5cm squares)
1x carrot (diced)
1x zucchini (diced)
¼ cup frozen peas
1 tbsp olive oil
1 tbsp oyster sauce
1 tsp soy sauce
Salt n pepper
½ cup water
1 tbsp corn flour- mixed with enough water to make a paste

4 sheets puff pastry

Method

1. Season the fish with salt and pepper and set aside.
2. Add a drizzle of olive oil in a frypan and sauté the vegetables to allow them to soften.
3. Stir through the oyster sauce, soy sauce, and water and simmer for 1 minute.
4. Add the fish and gently mix.
5. Pour in the corn flour paste and mix slowly until sauce has thickened. Remove from heat and allow pie mix to completely cool.
6. Cut disks of pastry for the base of the pies and slightly smaller disks for the tops. (The size of the disks will depend on the size of the pie tins you are using.
7. If using a pie machine, use the cutter provided and follow instructions for cooking.
8. If making a family pie, lightly spray with cooking oil and press the larger disk into the base of the tin/tray. Fill the pie mix ¾ full, place the top disk over the pie and using a fork, press the edges together to ensure they seal.
9. Bake pie in a pre-heated oven of 200 degrees for 30-40 min or till golden and crisp.
